BURTON, MI – El Lucha Taco food truck offers four generations of recipes used to create homemade Mexican cuisine.

Adam Mireles’ passion and skills for cooking can be traced back to his great-grandparents, who often sold tacos in the 1950s at Flint’s Chevy in the Hole.

“My great-grandmother and great-grandfather were selling tacos on the assembly line and they opened one of the first restaurants in Flint,” said Mireles, owner of El Lucha Taco food truck.

The food truck offers steak, ground beef, grilled chicken and vegetarian tacos as well as giant quesadillas, tamales and burritos.

Customers can get a set of three beef tacos with flour tortillas for $ 9 or three ground beef tacos for $ 8. The steak tacos cost $ 10 for three servings.

“My burritos are huge,” said Mireles, with a hint of excitement in her voice. “I would say they are the size of a newborn baby.”

The burritos are stuffed with beans, rice, choice of meat, cheese, lettuce, tomato, sour cream and salsa. Once the burrito is filled with ingredients, it’s encrusted with cheese and Dorito chips.

Burritos range from $ 10 to $ 15, depending on the toppings added.

Another customer favorite on the menu is Mireles’ version of the traveling taco, which he calls a traveling party. The creation comes in a box with salsa, sour cream, jalapenos, sauce, cheese, meat, lettuce and tomato.

Mireles, who started her own business in the food industry in 2016, grew up in the kitchen, raised by her great-grandparents and soaking up all the techniques her great-grandmother used to prepare meals. for the family.

The 36-year-old native of Flint started his business with a hot dog cart and eventually got his food truck and focused more on the recipes he was taught when he was younger.

“Everything I do is homemade. The guac – when you order guac, I make it fresh on the spot. Salsa – I make my salsa that morning and roll with four generations of recipes, my great-grandmother’s recipes, ”said Mireles. “My great-grandparents had the greatest influence on me by making food, by cooking. They taught me everything, Spanish, food, everything.

Mireles’ great-grandfather is 98 years old. He still mows his grass, does his shopping, cooks and is “sharp as a knife,” said the grandson.

On Saturdays, you can pick up the food truck from noon to 10:30 p.m. parked at Redline Brewing Company, 5470 Lapeer Road, Burton.
